It's defined in a somewhat eccentric way: in redboot.h they are defined
with EXTERN. main.c defines DEFINE_VARS though (see further up redboot.h
for the definition of EXTERN).
Well, it may _seem_ eccentric, but it is more maintainable as all the
configury is in one place, not two.
