I would first start be getting plain PPP working.
There are three options:
1) lwip has PPP support already
2) eCosCentric has a PPP port. Try contacting them about this.
3) There is a port to the OpenBSD stack done by Mark Retallack. See:

I think you normally run PPPoE by having PPP run on a pty. That might
not be so easy with eCos?
