The easiest one to use I know of is the BDI-2000 from Abatron.  It has
a GDB interface and it makes hardware debugging a breeze.  A little
expensive though.

BTW when you are debugging via hardware (ICE, JTAG), eCos is not
actively involved so most any device should work.
