Just choose something that already has board support in the public eCos
distribution. Poke around in packets/hal/arm and pick something that you can
find on the web for cheap.
I've used the bare-bones Atmel EB40A board (ARM7), and it works fine. It's
obsolete, but you can certainly find one easily enough if you choose it. Or
you can get something fancier, if you want to play with Ethernet, USB, etc.
